The Story
The Tornatore family has farmed the north slope of Mount Etna since 1865. Their Etna Bianco is made from 100% Carricante, Sicily's native white grape, grown in terraced volcanic soils and aged in steel and concrete to keep every bit of freshness.
In the Glass
Pale straw with green tints. Grapefruit, white peach, green apple, and wild herbs. Dry and bright, with a salty mineral finish that makes you reach for another oyster.
Pair It With
Oysters, fried calamari, grilled fish, clam pasta, lemon chicken, and goat cheese.
Serve
Well chilled, about 45–48°F.
