Producer

  • Jean Laurent is a grower-producer in the tiny village of Celles-sur-Ource, in the Côte des Bar, south of Épernay. He is the third-generation owner, and the family has grown wine there for centuries. The family settled in the village in 1850.
  • He's an RM (Récoltant-Manipulant), so every bottle comes only from grapes grown in his own vineyards.
  • The estate is about 35 acres per the importer and 39 per another retailer, mostly Pinot Noir with the rest Chardonnay. Sources differ, so I'd avoid quoting an exact figure.
  • His house style is single-variety bottlings, stainless steel with no oak, and full malolactic conversion.

Wine

  • Grapes and method: 100% Pinot Noir, made in the saignée style, meaning the color is bled off the skins.
  • Aging: the NV is a multi-vintage blend that spends 30–36 months on the yeast.
  • Dosage: 8–10 g/L, and each bottle carries a disgorgement date.

Tasting notes

  • pomegranate, redcurrant and bitter cherry, with spices, blood orange and a dusty mineral quality, a savory, structured rosé rather than a pretty one.

  • Salmon, tuna crudo, sushi.
  • Duck, and the Thanksgiving turkey.
  • It's a food rosé, so lean on the "drink it with dinner" angle.
