The winery. Château Dompierre sits in Saint-Laurent-Médoc, in the Haut-Médoc/Pauillac area of Bordeaux, run by owner-winemaker Michel Aroldi. He's a Libourne native who bought the estate in the early '90s after running Château Plain Point in Fronsac, and the story that makes him stand out: he started his winemaking career vinifying whites and trained alongside the late, legendary Loire vintner Didier Dagueneau — which is exactly why this Bordeaux white drinks like it wandered in from Sancerre. His reds (Dompierre Pauillac, La Croix Dompierre Haut-Médoc, Les Charmes Dompierre Médoc) get more press, but the white is his calling card for that Loire-in-Bordeaux trick.

The wine. 100% Sauvignon Blanc, sourced from Entre-Deux-Mers fruit on clay, limestone and sandy gravel soils. About a third of the harvest gets a short skin-contact maceration (roughly 12 hours) for texture, the rest is direct-pressed, and it's fermented/aged six months in stainless steel — no oak. 

Tasting notes: Bright citrus (grapefruit, lime zest) up front with the grassy, flinty snap you'd expect from a good Loire Sauvignon rather than a typical soft, tropical Bordeaux Blanc — crisp acidity, light-to-medium body, clean dry finish.

Food pairings: Gulf oysters or ceviche, ceviche/aguachile, ceviche-style Tex-Mex seafood, goat cheese, grilled shrimp, a simple lemon-butter fish, or a fresh herb salad — anything that wants a squeeze-of-lime edge.
