Quite dense in the glass — an incredibly unctuous Cab. The nose is layered with caramel, black cherry, and chai aromas. The palate is bold and presents as nearly sweet, with strawberry preserve, vanilla, and more caramel flavors. Big dark fruit forward — black fruits, chocolaty notes, and a dense, rich smokiness. The wine is so big, yet somehow still perfectly chiseled.
Oak regimen: lots aged separately a minimum of 11 months in a combination of new, once-used, and two-to-three times used French Oak, then the blend gets an additional three months in predominantly new French Oak.
Food pairings: ribeye, lamb, roasted red meats, dark chocolate, aged cheeses.
